Since I got back home in Italy all I’ve been doing is sunbathing laying on the Mediterranean coast here in Salento, sipping coffee, eating ice cream and relaxing.
Haven’t really done any proper cooking as I’m letting my mom spoiling me a bit with her amazing food. Yesterday tho I decided it was time to get some action in my life, so I head to the kitchen and made these easy summer rolls for lunch.
It’s all I have to share with you for now. Enjoy π
Ingredients:
- 2 big grilled bell peppers (peeled)
- 150 g goat cheese
- 1 tbsp chopped fresh parsley
- 50 g prosciutto crudo
- 1/4 tsp salt
- 1/8 tsp black pepper
Wash and chop the parsley
mince the prosciutto
then grab some goat cheese
and through all the ingredients in a bowl. Season with salt and pepper and stil well with a fork
Take one of the bell pepper, that you have previously grilled, peeled and removed the internal seeds, and open it up
and place half of the cheese filling in the center
then roll it up
and cut it into bite-size pieces
Refrigerate until ready to serve.
I’ll try to do more cooking in the coming days…it’s just that the beach and sun and sea are waaayyy too appealing to spend time in the kitchen…bear with me, please π
