Ginger-Lemon Salmon Fillet

It might be because I grew up on the Mediterranean cost of the south of Italy and  because my dad has always been a seafood lover and have fed me fish since I was an infant, fact is I LOVE fish!

Here in Shanghai outsourcing fresh sea fish is quite hard and extremely pricey, river fish is available everywhere but not sea water one. Salmon is, as a matter of fact, the easiest to buy, for this reason I try to incorporate it in my diet as often as I can.

There are many ways you can cook salmon, the one I’ll show you today is particularly easy. You will have to marinate your fillet with fresh gingers, sesame oil and lemon and then just bake it in the oven. If you don’t happen to have an oven, just cook it in a skillet with its marinate.

Ingredients (serves 2):

  • 2 salmon fillets
  • 1 tbsp minced fresh ginger
  • 1 lemon (juice and zest)
  • 2 tbsp chopped fresh parsley
  • 1 tbsp sesame oil
  • 1 tsp salt
  • 1/ tsp black pepper
  • 1 clove garlic, minced

Sprinkle the fillets with salt

and ground black pepper

in a bowl combine minged fresh ginger, garlic, chopped parsley and the grated zest of the lemon. Add the sesame oil

and squeeze in the lemon juice

Stir to mix all the ingredients together

Place the salmon into a zip lock bag

and pour in the marinate

Seal and put it in the fridge for a couple of hours or longer

Bake the salmon with the marinate at 200 C for about 15-20 min or until completely cooked

Serve with a side of fresh salad!
