We had a strong typhoon here in Shanghai which forced us all to stay at home! It arrived on Tuesday night and its strong wind and rain has been with us all yesterday. Luckily this morning when I woke up it seemed like it was gone. It is still cloudy here and there is a high possibility that it will start raining again, but it looks like the worst part is gone.
I made this St.Morris cupcakes last weekend for a friend of mine. According to her, they were good. I found them to be good enough for the amount of time that took me to make them, approximately 10 min!

Ingredients (makes 12 cupcakes):
- Half a package of chocolate cake mix
- 100 g digestive cookies
- 1/4 cup unsalted butter
- 1 bag of miniature marshmallow
Crumble the digestive cookies, melt the butter and pour it in the cookies mixing well
then divide the mixture between 12 muffin cups pressing gently to create an even and flat base. Refrigerate while you prepare the filling
Grab the chocolate cake mix
and prepare it according to the package instructions
fill up each muffin cup for 2/3 of its capacity
and bake at 180 C for about 15 min
Now quickly take the cupcakes out of the oven, add on top the marshmallow
and keep baking for 10 more minutes or until the surface gets a nice golden – brown color. Remove from the oven and let them cool down.
Enjoy them for breakfast or as an afternoon snack
