I haven’t made cookies in way too long! Months have gone by without me baking one single cookie. How awful is that?
So last week I baked 🙂 and then I gave my cookies to my friend Aurelien who was home sick. That’s the kind of friend I am!
I just got back from Beijing where I went for another business trip and some fun weekend with my friends there. I had a great time but now im so tired I need to get some sleep. Enjoy the cookies 🙂
Ingredients (makes 20):
- 1 cup + 2 tbsp flour
- 2 tbps cocoa powder
- 1 tps baking powder
- 1/4 tsp salt
- 1 whole small egg
- 1/4 cup butter
- 2 tbsp coconut oil
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 cup shredded coconut
- 1/2 cup oatmeal
- 1/2 cup chocolate chips
- 1 tsp vanilla extract
In a bowl combine flour, cocoa powder, salt and baking powder
stir together and set aside
In a bowl of your electric mixer combine sugars, butter and coconut oil
and mix until creamy. Next up, add the egg and vanilla powder
When well incorporated, with your mixer on slow, gradually add the flour mixture and the shredded coconut and oatmeal
keep stirring while adding the chocolate chips
Form into balls about the size of a heaping tablespoon and place on a lined-baking sheet
Gently press each ball down a bit
then bake at 350 F, 180 C for about 12-13 minute. Remove from the oven and let the cookies cool on a wire rack
Then enjoy them for breakfast,
with your afternoon tea or as your midnight snack!
