I’m back!
Got back from an amazing 3 day business trip in Taiwan. Taipei is one of the most beautiful places I’ve been in Asia so far. Clean, quite, green, modern, yet so authentic Chinese. People are super nice and friendly and they do offer a service with a smile which is, for some reason, completely absent here in Mainland China.
I did enjoy the food a lot, specilly the street food and had THE BEST dim sun ever. I’ll post some pictures later this week.
When I got back to Shanghai I had NOTHING left at home to eat but some frozen chicken breast and an almost empty jar of mustard which is why I have decided to make this chicken recipe. Mustard and chicken together are some of my favorite combination. Today I give you two options for cooking them in an healthy way.

Ingredients:
- 1 whole chicken breast
- 3 tbsp yellow mustard
- 1 tbsp honey
- salt
- 1 tbsp Italian herb mix
- 4 tbsp breadcrumb
- 1 tsp avocado oil (or any vegetable oil)
Cut the chicken breast into 4 slices
Season each slice with 1/2 tsp salt
In a bowl combine mustard and honey
stir well until ingredients are combined
Option 1
In a plate mix breadcrumb, Ialian herb mix and 1/2 tsp salt
Take 2 slices of chicken and dip them into the mustad sauce
then coat them in breadcrumb
and place them on a baking tray.
Cook at 20 C for about 15 min then serve immediatelly
Option 2
Dip the chicken breast into the mustard sauce and let it marinate for at least 20 min
Grease a skillet with 1 tsp avocado oil an grill the chicken with its marinate sauce until meat is completely cooked
Serve with your preferred side of veggies
Both options are great in a sandwich as well!
