I’m in Taipei, Taiwan, on a business trip. I landed a few hours ago and I already LOVE this city. It is so clean, quite, civilized modern yet so China authentic, for some reasons it reminds me of a mix between Japan and Hong Kong.
People have been incredibly nice and helpful so far. Tonight I will be having my first meal here…I think I’ll go for some typical dim sum! mmm, I’m already starving!
Next couple of days I’ll be quite busy attending business events and meetings but I’ll try to take as many pictures I can of this amazing place and its food.
Before tho I want to share with you this lava cake I made about a month ago. There are no words to describe how delicious this was! You’ll have to try make it to find out 😉
Ingredients (makes 4):
- 180g dark chocolate, chopped
- 250g butter, chopped
- plain flour, for dusting
- 4 eggs
- 1/2 cup caster sugar
- 1/4 cup plain flour, sifted
- cocoa powder and vanilla ice cream to serve
Place chocolate and butter in a microwave-safe bowl
Microwave on medium-high for 1 to 2 minutes, stirring with a metal spoon every 30 seconds, or until melted and combined. Cool completely
Using an electric mixer, beat eggs and sugar for 8 to 10 minutes or until thick and creamy. Slowly fold in chocolate mixture
then add the flour
and mix until combined
Spoon mixture into heavily greased and floured ceramic ovenproof dishes. Freeze for 1 hour.
Bake at 200 C for about 15 min or until just set (cakes will wobble when touched).
Stand dishes for 1 minute then turn onto plates. Dust with cocoa powder and pair it with a couple of scoops of vanilla ice cream
Then take a minute to center yourself and just cut it right in the center…
lava chocolate will run out of your cake
