I know, I know…I’m getting boring. All I am posting here on EC recently are salads and cold desserts. The fact is that I share with you what I actually make and eat at home myself and with this “inferno style shanghai Summer” all I can handle is cold food. But I promise you I will be posting a proper meal soon!
For today enjoy this fabulous grilled salad. Absolutely divine!
Ingredients (serves 2):
for the salad
- 2 romaine hearts
- 1 pound of shrimps
- 2 tbsp extra virgin olive oil
- 1 tbsp of balsamic vinegar
- 1 tsp salt
- 1 cup cherry tomatoes
for the dressing
- 1 clove garlic
- 1 tsp mustard
- 2 tbsp white wine vinegar
- 1/3 cup olive oil
- salt and pepper
- 1/4 cup fresh basil leaves
- 1 tsp Italian herb mix
In a bowl place the shrimps
in a separate bowl wash and cut in half the tomatoes
wash the romaine hearts and set aside to dry
combine olive oil, balsamic, salt and pepper
add 1 tbsp of the dressing to the shrimps
and 1 to the tomatoes
then brush the remaining on the romaine hearts
place all the vegetables and shrimps on a hot grill pan and cook them for a few minutes
rotating them until cooked
In a separate bowl combine all the ingredients for the dressing
and blend them until creamy and smooth
Place a grilled romaine heart on a plate. Cover with shrimp and tomatoes.
Drizzle with vinaigrette
Serve!
