Saying that the past 2 weeks has been burning hot here in Shanghai does not really convey how actually horrible it has been and it still is. I am trying to survive this inferno that someone calls Summer…I wont be going home until September which means I have 2 full months ahead of me of 38+ Celsius and 90% humidity…I seriously need to find a swimming pool where I can refresh myself at least on weekends.
As you guys all know, in the summer I try to cook as little as possible tho I still need to feed myself and I still enjoy creating new dishes . This is what I made for lunch yesterday, a delicious refreshing salad with chickpeas, barleys, fresh fruit and a sour-sweet dressing!
Ingredients (serves 2):
- 1 can of spinach
- 1/2 can of chickpeas
- 1 small peach
- 1/4 cup blueberries
- 1-1/2 cup barley
- 2 tbsp apple cider vinegar
- 1 tbsp Maple syrup
- 1 tsp olive oil
- 1 heaping tsp yellow mustard
- 1/2 tsp salt
- 1/4 tsp cinnamon
Drain the spinach from their water and put them in a bowl
add the chickpeas
chop up the peach and add it to the bowl
together with the fresh blueberries
and the barley
in a separate bowl prepare the dressing. Add 2 tbsp of apple cider
1 tbsp of maple syrup
1 tsp of olive oil
1 heaping tsp of yellow mustard
salt and cinnamon
stir and pour on top of the salad
Stir all the ingredients together and refrigerate or serve!
