The Frittata Sandwich

Absolutely my favorite sandwich ever! My mom used to make it for me when I was a little girl and had to go on a day school trip. I never used to be able to finish it and always brought back home leftovers. Now things are slightly different…I can eat no problem two of this sandwich and still crave for more…

Let me show you how you can make it 🙂

Ingredients (serves one):

  • 2 slices whole wheat bread
  • 2 whole eggs
  • 2 tbsp shredded mozzarella cheese
  • 1/2 round ripe tomato
  • 3 leaves lettuce
  • salt and pepper
  • Italian herbs mix

In a bowl combine eggs, salt, pepper and Italian herb mix

Slightly beat them up

then cook your frittata in a skillet with a bit of olive oil or you can also bake it in the oven (which is what I did).

In the meantime slice up the tomato

wash and dry the lettuce

and grab some shredded mozzarella cheese – I dont use fresh mozzarella for this sandwich as it has too much milk and it would get bread too soaked

Spread the bread with a bit of mayo, first one slice

then the other

put the frittata on one slice of bread

then top it up with the tomato


and mozzarella

then finish up with the second slice of bread

Grill both sides on a hot pan with a bit f butter

Cut it in half and serve
