You guys know how much I LOVE eating pancakes. It’s one of my preferred breakfast to have in the morning on weekends.
Today to celebrate Italy great victory against Germany I’m going to share with you this fantastic recipe!
Just a few weeks ago I bought a package of Garbanzo flour from Taobao so last Sunda I decided to try it out on a pancake recipe. To make it even healthier and add some extra flavor I have incorporated some quinoa. The result? Absolutely AMAZING!
You guys should definitely give this a try!
Ingredients (makes 4 pancakes):
- 1/2 cup garbanzo flour
- 1/2 cup cooked quinoa
- 1 medium banana
- 1 tbsp sugar
- 1 tsp baking powder
- 1 whole egg
- 1-2 tbsp soy milk
- 1 tbsp butter
- Maple syrup
In a bowl combine garbanzo flour, baking powder, cooked quinoa and sugar
In a separate bowl mash 1/2 banana
then add in one whole egg
and mix the ingredients together
Pour the wet ingredients into the dry one and stir to combine. If the batter is too thick add a few tbsp of soy milk
and stir to combine. If the batter is too thick add a few tbsp of soy milk
In a skillet heat up the butter and scoop out 1/4 cup of the batter, you should be able to get a total of 4 servings. Cook the pancakes on both sides for a few minutes. Then remove and set on kitchen paper to dry off the excess butter.
Serve your pancakes with the remaining half banana sliced up and some maple syrup!
