I am not a fan of beans, I’ve gotta be honest with you. Ever since I was a little kid I could not stand the taste and consistency of beans, of ANY! Growing up I started liking lentils and chickpeas and since beans are SO good for your body I have tried to force myself to have at least one serving a week. For this reason I try to come up with new recipes where I combine them with different ingredients to make eating beans more enjoyable.
This salad is a great idea to enjoy lentils in the Summer, hope you guys will like it!
Ingredients:
- 1 can of lentils (drain and rinse)
- 1 cucumber
- 1/2 red onion
- 1 ripe tomato
- 1/2 lemon
- 1/2 tsp salt
- 2 tbsp olive oil
- 2 tbsp chopped parsley
Drain and rinse the lentils
Chop up the cucumber
tomato,
red onion
and fresh parsley
add all the ingredients in the bowl with the lentils and squeeze in the juice of half a lemon
season with salt
and drizzle with extra virgin olive oil
mix all the ingredients together and refrigerate
when ready to serve take your salad out of the fridge, give it another stir
and enjoy!
