There are many different types of pesto you can make at home and then use them to dress your pasta or to give extra flavor to your sandwich.
I’ve made this red bell pepper pesto with walnuts last Saturday and I will be integrating it in many future dishes.
Here is the recipe! It’s a rainy Monday here in Shanghai and you know what that means…I’m in a bad, BAD mood! 🙁
Ingredients:
- 6-8 red bell peppers
- 2 tbsp olive oil
- 2 cloves garlic
- 2 tbsp grated parmesan cheese
- 1 cup chopped walnuts
- 1 cup fresh basil
- 1 tbsp chopped sun-dried tomatoes
- salt and red pepper flakes
Wash the red bell pepper
and roast them in the oven for about 20 min.
Then remove the skin and chop them up
in a bowl combine the chopped sun-dried tomatoes, basil, garlic, parmesan cheese and walnuts
add the bell pepper and pour in the olive oil
next up add some salt with red pepper flakes
and with an immersion blender pure’ all the ingredients together. Taste to see if more salt or red pepper flakes are needed. Also look at the consistency if more olive oil is needed
Store into jars covering the top with more olive oil or use immediatelly!
