I can say that the Summer is officially arrived here in Shanghai, with its humidity, its rain and its suffocating heat. If I think that this is JUST the beginning I want to emigrate to the North Pole and come back here only in a couple of months…

Because of this unbearable heat, cooking has been dramatically reduced in my kitchen. Many salads, shakes, ice cream and a few baking dish are part of my daily diet now. Just yesterday I made this AMAZING salad with garbanzo beans, spinach and avocado, which I will share with you later this week. Today let me first show you what I had for dinner the other day: lean chicken breast stuffed with a cream of spinach and feta cheese. Divine!

Ingredients (serves 2):
- 1 whole chicken breast (no skin – no bone)
- 1/4 cup feta cheese
- 1 can of spinach (or 1 cup of boiled spinach)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp breadcrumb
- 1/2 nutmeg
- 1 tbsp pine nuts
- 1 tbsp extra virgin olive oil
Cut the chicken breast into thin slices (4 in total) and sprinkle them with salt
In a bowl combine the spinach with the feta cheese
add pepper (no salt as the feta is already quite salty)
and the nutmeg
Stir all the ingredients together
then spread the filling on each slice of chicken
and drop a few pine nuts
and roll each slice up using a couple of toothpick to close it
Coat each roll in breadcrumb then sprinkle with olive oil
and back at 180 C for about 30 min or until completely cooked inside and golden brown on the outside
Slice them up and serve!
