One of the thing I like the most of American food is pancakes! I have really no limit to the quantity I can eat and I am not ashamed of it!
The other day I decided to use them in a different way, not for breakfast but as finger food to offer to a few friends I had over. I made mini pancakes and then I spread a generous amount of cream cheese on them with a slice of smoked salmon…absolutely amazing!
I did not take step by step pictures cause I did not know I was going to post this recipe here, but it came up so good that I couldn’t not share it with you 🙂
Ingredients:
- pancake batter
- 2 tbsp butter
- 150 g cream cheese
- 70 g smoked salmon
- green onion
Prepare the batter using your preferred pancake recipe. Scoop out one tbsp of batter on a buttered skillet and cook your pancakes on both sides. Remove and let them cool down.
On top of each pancake spread the cream cheese then lay a small piece of salmon. Chop up the green onion and sprinkle it on top!
Serve!
