Spinach Salad with Scallops

I made this salad a while ago. It had been on my list of posts to share for quite some time. This list is getting longer and longer…might that be cause I cook too much?

Spinach salad with scallops marinated in lemon juice, sesame oil and Italian herbs mix…Can it get better than that?

It’s a grey, rainy day in Shanghai, hope this will bring to you some positive energy 🙂

Ingredients (serves 2):

  • Fresh Baby spinach
  • 8 big scallops
  • 2 tbsp sesame oil
  • 2 tsp salt
  • 1 lemon
  • 1 tbsp Italian herbs mix
  • 2 tbsp pine-nuts
  • 2 tbsp olive oil

Start by rinsing the scallops

then season them with the juice of half a lemon

Italian herbs mix, salt and pepper

and the sesame oil

Stir around and let it marinate overnight or for at least 3 hours

In a skillet cook the scallops with their marinate juice until they get a nice golden-brown color.
Don’t eat them yet! Don’t!

Meanwhile wash the baby spinach and lay them on a plate

Add the scallops and pine-nuts

then in a bowl combine olive oil, salt and the juice of the remaining half lemon, stir around then pour onto your salad.


Now you can enjoy!
