Have you noticed? ExpatCucina got a fancy new look! Thanks to the guys of It-Consultis who have worked on it for the past couple of weeks!
How do you like it! I personally LOVE IT! I find it to be more organized, less busy and more professional looking. But I want to know what is that you guys think about it.
Today to celebrate ExpatCucina’s new look, I’m going to share with you this amazing pancakes I made for myself last Sunday. I was cleaning the cabinet in my kitchen and I noticed I have all these spices from India I completely forgot about. In particular there was this bag of cardamom that smelled divine so I decided to use it into my morning pancakes. Then to give it a bit of a fresh taste, I’ve caramelized a mango to make a tasty sweet sauce!

Ingredients (serves 2):
- pankaes mix + ingredient required on the package instructions
- 1 tbsp cardamom seeds
- 1 tsp cinnamon
- 1 mango
- 3 tbsp sugar
- 3 tbsp water
- 1 tbsp butter
- syrup
Prepare the batter for you pancakes following the package instructions
Grab some cardamoms, open them up and mash the internal seeds, you need about 1 tbsp of the delicious staff!
Then add it to the batter and stir well to combine
Melt 1 tbsp of butter in a skillet and cook the pancakes (you should get 6 big pancakes)
Meantime chop up the mango
Put it in a skillet with the sugar, water and cinnamon
and cook them on low until they caramelize
Pour the mango madness onto the pancakes. Add some syrup, sprinkle more cinnamon and serve!
These were GOOD! and I mean it!
