I feel good today tho and I am completely ready to share with you this cookie recipe!

Ingredients:
- 1 1/2 cups old fashioned oats
- 1/2 cup all purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/3 cup unsalted butter, at room temperature
- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1/3 cup chopped toasted walnuts plus 3 tbsp
- 1/3 cup dried cranberries plus 3 tbsp
Cream butter with brown and white sugar. Add in the egg and beat well. Add the vanilla extract
In a bowl combine flour, oats, cinnamon, salt and baking powder
Pour the dry ingredients into the wet one
and mix well until they are all well incorporated. Next up, chop up 1/3 cup walnuts
and measure 1/3 cup cranberries
Add the cranberries to the cookie batter
then add the walnuts too and mix well
Scoop dough up by rounded tablespoons and shape into balls. Flat them slightly.
Mix the reserved nuts and cranberries together
and press a few gently onto the top of each cookie
Bake at 180 C (375 F) for about 10-12 min.
Let your cookies cool down, then enjoy!
