I’m very much into making muffins recently…not sure you have noticed…

well, the streets of shanghai are full of fruit stands selling fresh, red, sweet strawberries so last Sunday on my way back home I couldn’t help but buy a basket and make this moisture, healthy muffins. I’m glad I did cause I fell in love with them at first bite!

Ingredients (makes 12 muffins):
- 1-1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 2 eggs, lightly beaten
- 1/2 cup fat-free plain yogurt
- 1/4 cup butter, melted and cooled
- 1 teaspoon vanilla extract
- 2 cups coarsely chopped fresh strawberries
Whisk eggs and sugar
then add in yogurt
and with the mixer on slow pour in melted butter
Next up add the flour and baking powder together with the vanilla extract
You will get a smooth and dense batter….don’t eat it yet…please!
Chop up about 2 cups of fresh strawberries
and add them into the batter
gently fold them into the batter
Fill muffin cups lined with paper liners two-thirds full
Bake at 375° for about 20 minutes. Remove from the oven and let them cool on a wire rack
Enjoy this moisture, fresh and healthy muffins!
