I am FINALLY done shooting and cooking for my cookbook! I still can’t believe I actually got myself there. I’m happy!
To celebrate, I am going to give you a first taste of what my cookbook will be like by sharing with you one of the recipe that will be part of it. A delicious caprese pasta!
This pasta dish takes its name from the caprese salad. Basically it is pasta with fresh tomatoes and mozzarella which for flavor and colors resemble the famous Italian salad.
The Caprese Pasta is ideal in the Summer, it is also very easy and fast to make and pretty healthy as well.
Here is how you make it 🙂
Ingredients:
- 160 g short cut pasta
- 300 gr ripe cherry tomatoes
- 2 cloves garlic
- 2 tbsp extra virgin olive oil
- 2 tbsp chopped fresh basil
- 100 gr fresh mozzarella
Cook the pasta according to package instractions.
Wash and cut the tomatoes
Grab mozzarella and fresh basil
Slice up the mozzarella and chop the basil
In a skillet heat up some extra virgin olive oil and saute garlic and tomatoes for about 5 min on midium/high. Add 1 tbsp of chopped basil
Thow in the pasta, mix it well with the tomatoes
Transfer it on a plate and gently lay the sliced mozzarella on top and add more fresh basil
Serve immediatelly or store in the fridge if you prefer it cold
