It’s getting warmer in Shanghai…it’s still not warm but at least it’s not freaking cold like it was a few weeks ago. It has stopped raining, FINALLY, and we have been able to enjoy a bit of a sunshine in the past days!
The sun makes me happy…
To celebrate this nice weather last weekend I made myself this AWESOME pineapple and shrimps salad!
It was fresh
healthy
a tiny tiny spicy
and beautiful!
Ingredients (serves 2):
- 1 whole pineapple
- 1/2 cup mini shrimps
- salad mix
- 1/2 cup cherry tomatoes
- mint leaves
- 1/2 tsp salt
- 2 tbsp extra virgin olive oil
- 1 tbsp white vinegar or lemon juice
- 1 tbsp Spicy vincotto
Start by cutting the pineapple in half and removing the central part. This way you will have 2 empty pineapple “bowls” where we will serve our salad. Chop up the fruit and set aside.
Wash and cut in a half the cherry tomatoes
Boil the shrimp for about 5 min, then strain them and let them cool down
In a bowl place the salad mix
together with the chopped pineapple, tomatoes and shrimps. Dress it with salt, extra virgin olive oil
vinegar or lemon juice
and this delicious stuff that I brought from Italy! Vincotto is basically a stronger balsamic vinegar. This one I’m using has got a bit of a spice kick. If you can’t get your hands on something like that, you can replace it with good balsamic and some minced chilly peppers.
Coat all the ingredients in this delicious dressing, and divide them into the 2 empty half pineapples.
Serve immediately!
