Nutella Oreo Cupcakes

A few weeks ago I posted a recipes for Peanut butter Oreos Cupcakes…they were good

very good…

My friend Marc McAlister suggested me to modify that recipe by replacing peanut butter with nutella and the chocolate batter with a vanilla one.
I liked the idea so last weekend I made them!

and this cupcakes my friend…were GOOD! very good! Different from my peanut butter one but equally interesting in the combination of flavours.

I covered the cupcakes with a Nutella Butter-cream frosting…to die for!

Here is how you make it!

Ingredients (makes 6 cupcakes):

For the cupcakes

  • 1/4 cup unsalted butter
  • 1/3 cup + 2 tbsp granulated sugar
  • 2 whole small eggs
  • 3/4 cup flour
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1/4 cup milk
  • 1/4 cup Nutella
  • 1 package of oreos

for the frosting

  • 3 tbsp Nutella
  • 1/2 cup butter
  • 1 cup powdered sugar

Let’s start by preparing the batter for out cupcakes. In a bowl of your electric mixer cream sugar and butter until they are nice and creamy.  Add one egg at a time beating well after each addition. Add the vanilla extract

Combine the flour and baking powder and incorporate alternating it with the milk

The butter is ready!

Grab your oreos and for each cupcake spread 1 teaspoon of Nutella over 2 Oreo cookies and stack them on top of each

Spoon one tbsp of the vanilla batter on the bottom of each muffin cup

then put the stack of oreos and nutella right in the centre pressing well down

the scoop out another tbsp of the batter on top letting it roll down the sides

Bake at 180 C (375 F) for about 20 min.

Meanwhile prepare the frosting my creaming nutella and butter, then slowly sift in the powdered sugar. Spread each cupcake with the Nutella butter-cream frosting

and you are DONE!
