Baked lean chicken meatballs

Last week I went to Papa Johns with my boss for lunch. Onthe menu there were this “Italian style baked meatballs”…from the picture they looked tasty so I decided to give them a try!…When the waiter brought them to our table tho, I looked at them and immediatelly regretted of my order. They were dry, small, hard! A nightmare!

Tho the idea of baking meatballs with tomato sauce and mozzarella cheese was still appealing to me, so I decided to try and make them myself! They were WAY BETTER!

I used ground chicken but you can use beef or pork. The secret to not get them to dry is to use a considerate amount of tomato sauce which will keep them nice and moisture while baking.

Ingredients (serves 3):

  • 300 g ground chicken breast
  • 1 whole egg
  • 5 tbsp breadcrumb
  • 2 tbsp chopped parsley
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup tomato sauce
  • 1 tsp salt
  • 1/2 tsp ground black pepper

In a bowl combine the ground chicken, breadcrumb, the egg, salt, pepper and chopped parsley

With a fork combine all the ingredients together. Spread a couple of tbsp of tomato sauce on the bottom of a baking tray. Using your hand form medium size balls and lay them close to eachother on the tray

Sprinkle the shredded mozzarella cheese

cover them with the remaining tomato sauce

and sprinkle a couple of tbsp of breadcrumb on the top.

Bake at 180C (375 F) for about 30-40 or until the meatballs are cooked inside and they look nice and cryspy on the outside.

Serve them immediatelly!
