Yes, one more cheesecake recipe! And I am not going to stop here, more will follow!
You know there is a deep love between cheesecakes and me and a long history between us. Today is the time of a Chocolate marble one…To die for!
I made it for my house-warm dinner and my friends loved it! It could also be a good idea for your Valentine’s dinner…why now?
Ingredients:
for the crust
- 200 g digestive cookies
- 1/2 cup butter
for the filling
- 100 g dark chocolate
- 250 g cream cheese
- 1/3 cup + 2 tbsp heavy cream
- 1 cup sugar
- 2 whole eggs
- 2 tbsp flour
- 1 ts vanilla extract
Start by making the crust! Crumble the digestive cookies with a food processor or with a rolling pin in a zip lock bag
Melt the butter
and pour it onto the cookies
stir with a spoon then press crumbs evenly over the bottom of a greased spring form pan. Cover and refrigerate while you make the filling!
Grab some dark chocolate
In your microwave melt the chocolate with 2 tbsp of heavy cream. Set aside and let it cool down
In a bowl of your electric mixer mix together cream cheese, sugar and flour until soft and fluffy
add one egg at a time mixing well after each addition scraping sides of the bowl
add vanilla extract and heavy cream
and mix until well incorporated. Remove about 1/2 cup of the batter
and mix it with the melted chocolate
Poor the remaining batter on top of the crust
then scoop out the chocolate mixture
and with the back of a spoon gently mix the 2 batters together without combining them completely. Bake at 170 C for about 20 min then turn the temperature down to 120 C and back for 40-50 more minute or until center is set.
Remove from the oven and let it cool down. Refrigerate until ready to use.
