Happy Chinese New Year of the Dragon everybody!
Today is new year’s eve and China is getting ready for some big celebration. The year of the dragon is about to start and tradition wants that you gather with your friends and family making Jiaozi (dumplings) and at midnight illuminate the sky with fireworks.
Believe it or not this is, in almost 5 years, the first time I get to spend the holiday in China. Before my ex always wanted to leave the country and use the week holiday to travel somewhere and visit new places, something I’ve always loved to do with him. This year tho, because well I’ve been spending a lot of money on my new apartment, because I had no one to go travelling with and because most of my friends have decided to stay in Shanghai, I am going to celebrate the holiday here in China. Tonight we are going to gather at my friend chef Mike’s house, eat some dumplings and other snack, wait for the midnight and then look at the sky litterally being set on fire by the 1.3 billion Chinese people!
To contribute to the party I’ve decided to make this easy peanut butter choco balls. Here is the recipe my friends!
Ingredients:
- 1/3 cup (heaping) creamy peanut butter
- 1/2 cup white sugar
- 1/2 cup cocoa powder
- 2 eggs
- 100 g milk biscuits
- 1 cup sweet coconut flakes
In a bowl of your electric mixer combine peanut butter, sugar, eggs and cocoa powder
mix all the ingredients together on low speed
Grab the biscuits
and crmble them in
then mix on low to get the cookies well incorporated
Use the choco mixture to create small balls (the size of a chustnut I would say)
put some sweet coconut flakes in a plate
and coat each balls so that its surface will be completely covered
Refrigerate your peanut butter choco balls until ready to serve!
