Melt in your mouth cookies!

I made this cookies last Sunday with no internet at home, no recipes to check and no scale to use. They came right out of my heart and I’ll tell you what: they were* AMAZING!

*past tense because well they are gone, I ate them all …

I was in a bad mood cause I just had a fight with one of my best friend here in Shanghai, outside it was raining, which did not help my mood at all, and I had no desire to leave my apartment for the whole day. So I went to the kitchen, turned on my KitchenAid and started cooking!

I eventually ended up going out as my friend and I made piece and he came pick me up and took me out to dinner. We went to this new Italian restaurant call Nene on Yongfu rd and enjoyed a very nice dinner with pizza and pasta!

Back to the cookies, these are definitely going to go up to my top ten favorite cookie recipes. Make this for Chinese New Year or offer them to your guests for tea or make them just for yourself…why not?

  • 100 gr all purpose flour
  • 1/3 cup unsalted butter
  • 1 tsp vanilla extract
  • 2 tbsp white sugar
  • 1 whole big egg yolk
  • strawberry Jam (or apricot, or peach, or any flavour that makes your skirt fly up)

In a bowl of your electric mixer combine the flour, sugar, butter, vanilla extract and egg yolk

Turn on your mixer on medium speed and mix all the ingredients together until you get a nice and soft, smooth dough

Wrap it up in plastic paper and put it in the fridge for at least 1 hour

Meanwhile go pole dance! I installed my pole in my new apartment, BTW!…:)

After 1 hour, take the dough out of the refrigerator and roll it into a long rope about 2 finger thick then cut out 1 inch pieces

and using your hands, shape each piece like a ball

u see?

then using your finger press it down gently right in the center of each ball. NOTE: you don’t want to go all the way down

Refrigerate again for an other 30 min, then bake at 200 C for about 15 min or until cookies are nice and golden brown

Let the cookies cool down a bit then put right in the center about 1/2 tsp of your selected jam, I went for strawberry as it is my favorite, but feel free to use whatever flavour you like the most!

Your cookies are ready to be served!

Enjoy my friends!

See you in a couple of days with a new recipe!
