White Chocolate Chips Pecan Cookies

Today’s recipe are these sweet white chocolate chips with pecans cookies I’ve made for my roomie Jess before leaving for Italy.

I’m feeling much better, still can’t eat much but at least I have no fever and the demon that was living in my body has finally left…LOL

In this remaining week in Italy I’ll try to cook as much as I can! Promise.

But now let’s bake some cookies πŸ™‚


  • 3/4 cup butter
  • 1/2 cup white sugar
  • 3/4 cup brown sugar
  • 2 cups flour
  • 2 whole eggs
  • 1 cup white chocolate chips
  • 1/2 cup chopped pecans
  • 1 tbsp flaxseeds
  • 2 tbsp vegetable oil
  • 1 tsp baking powder

In a bowl of your electric mixer combine butter with white and brown sugar

Beat on meadium speed until nice and creamy. Next up, add one egg at a time mixing well after each addition

add the four and baking powder

and in between flour add a couple of tbsp of vegetable oil

next add to the mix a tbsp of flaxseeds…HEALTHY!

now grab some pecans and chop them up

(FOCUS? where is it? Where was I looking?????)

and throw them in the bowl

same with the white chocolate chips

Drop tbsp of dough onto the prepared baking sheet

and bake at 180 C (375 F) for about 10 min. Remove from the oven and let it cool down on a wire rack

And there you have your cookies πŸ™‚
