It’s Christmas Eve and finally after 3 days spent in bed really sick with a horrible stomach flu today I’ve been able to get myself in the kitchen and make “Panettone”.
For those of you who don’t know, panettone is type of sweet bread loaf originally from Milan prepared for Christmas. It is THE Xmas dish that would never be missing on the table of an Italian family the 25th of December.
I never made it myself, I always bought it at some local bakery, but this year I thought it was time to give it a try and I’m grad I did as it came out delicious.
Because I’m very sick I was just able to taste a tiny bite but hopefully I’ll recover soon so that I can enjoy more of it!

Ingredients:
1 panettone mold
Step 1
- 20 g fresh yeast
- 50 ml warm milk
- 1/3 heaping cup of flour (50 g)
Step 2
- 2 egg yolks
- 2/3 cup flour (75 g)
- 20 ml lukewarm water
Step 3
- 2/3 cup of flour (75 g)
- 1 egg
- 15 g soft unsalted butter
- 2 tbsp sugar (50 g)
Step 4
- 1-1/4 cup flour (150 g)
- 1/2 cup (less) of sugar (100 g)
- 1/3 cup + 1 tbsp unsalted soft butter (100 g)
- a pinch of salt
- 1 tsp vanilla extract
- 1 egg yolk
- 100 g raisins
- 50 g candied orange
- 50 g candied lime
STEP 1
Grab 20 g of fresh yeast
and crumble it in a big bowl
pour in 50 ml of warm milk
and stir with a woden spoon until the yeast is totally melted
Sift in the four, stirring well to combine
then cover with wrapping paper and let it rest in a warm place for about 30 min
STEP 2
30 min later this is how it will look
add in 2 egg yolks

and while stirring pour in 20 ml of lukewarm water
cover again with plastic wrap and let it rest for 45 min
STEP 3
Take your dough and add more sugar

1 egg and 15 g of soft butter
stir all the ingredients together, cover again with plastic wrap and let it rest for 30 more minute…go take a nap!
STEP 4
Now it’s time to combine the remaining egg yolk
flour and sugar
vanilla extract and butter
then grab the candied orange and lime
and add them too
and the raisins that you will previously have soaked in water
Mix all the ingredients together until you get a very soft dough
Place it inside the panettone mold
and let it rest for about 2 hours
It will double in size then it’s time to bake it at 180 c (375 f) for 30-40 min
and there you go, your homemade panettone is ready!
Bring it to your table tomorrow!
