To celebrate today because it’s a special day, I’m going to share with you this delicious quiche I made last Saturday when I had a few friends over for dinner.
I ‘m kinda in a rush as in a few hours I’ll have dinner with about 20 other ppl at the best Thai resaturant in town, Urban Thai! We are going to celebrate this special day and afterwards we’ll head to the Spot. If you guys are out and about come join us!

But now let’s focus on the quiche!
Ingredients:
- 1 pie crust
- 1/3 cup chopped sundried tomatoes
- 200 g feta cheese
- 1/4 cup basil leaves
- 1/3 cup black olives, chopped
- 1/4 cup grated parmesan cheese
- 2 big whole eggs
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp ground black pepper
Prepare the pie crust following my post for making Pie Crust
Place a sheet of baking paper over the pastry, then pour enough beans to cover the base.
Bake for about 10 minutes at 200 c then remove from the oven.
Chop up the sundried tomatoes
Wash some fresh basil leaves
then chop’ em up
and add them over the base of the pie with the tomatoes
crumble the feta cheese
and add that too
together with the chopped olives. Yummy!
In a bowl combine eggs, salt, pepper and parmesan cheese
Beat up then pour in the cream and beat to combine
Pour the liquide over the tomato mixture
Bake at 180 C for about 30-40 min or until the pie is firm in the center
Remove from the oven, let it cool down
then serve!
Perfect for a picnic or for a light lunch 🙂
