I’m having fun! That’s all I have to say…this single life is not THAT bad after all. Being by myself is pushing me to do more things, to be more active, to go out more, meet new people, learn new things, look at life as a precious gift that I should enjoy more instead of waisting it on things and people that, as a matter of fact, are gone!
I want to tell everybody today that Im happy and Im planning on being so for the rest of my life. Nothing and no one is worth our joy and our smiles! We worry too much about the future and remember too much about the past, yet now is the ONLY time that really exists…we all need to learn how to live in it and enjoy it more…to make each day count!
Now…after this brief lecture on life, that Im sure you guys didnt need…but maybe I did…let’s move on and make Oreo cupcakes…shall we?
I made these delicious creamy/sweet cupcakes last Saturday when the crew of Orland To came to my house to shoot the last part of their fitness DVD. I want to thank these guys once more…I had a blast with you all!
Now I’ll knock this off and tell you how to make these Oreo cupcakes, then I’ll shut up and go to sleep…Happy?

Ingredients (makes 12 cupcakes):
for the cupcakes
- 1 cup + 2 tbsp flour
- 1/4 cup chocolate chips
- 1 tbsp baking powder
- 1/4 cup + 2 tbsp butter
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 3/4 cup buttermilk
- 2 small eggs
- 12 half oreos
for the frosting
- 1 cup heavy cream
- 2 tbsp powder sugar
- 12 half crumbled oreos
- 6 oreos to decorate
Cream sugar and butter
add eggs, one at a time beating well after each addition
add vanilla extract
melt about 1/4 cup of chocolate chips and add it to the mixture
then add half of the flour plus 1 tbsp of baking power
mix then add half of the buttermilk
beat well then add the remaining flour and buttermilk
Note on how to homemake buttermilk. Pour a little less of 3/4 cup milk, then add a bit of vinegar and wait a few minutes…
devide the oreos in half
and place cupcake liners in cupcake pan, then place one oreo in each liner, cream side up
Divide the batter between the prepared liners
Bake at 180 C (375 F) for about 20 min. Remove from the oven and let the cupcakes cake cool completely
Meanwhile prepare the frosting. Whip the cream and sugar until stiff
Crumble the remaining half of the cookies
and gently fold in the whipped cream
Scoop the mixture into a piping bag and frost the cupcakes. Then grab 6 more oreos and cut them in a half
and top each cupcake with half of an oreo
Refrigerate until ready to serve!
