This recipe is for my friend Morgan!
A few days ago she posted this on the wall of the Expat Cucina’s group
she requested a pumpkin base wintry drink of some sort and, since whatever request you guys have I try my best to satisfy, today I’m about to share with you this easy winter drink made with milk, pumpkin and coffee!
In Shanghai weather is not cold yet but I know in many other parts of the world it is, so enjoy!
Ingredients (one serving):
- 1 cup whole fat soy, coconut o almond milk
- 2 tbsp pumpkin puree (see recipe below)
- 1 tbsp sugar
- 1 cup strong espresso
- 1 tsp cinnamon sugar
For the pumpkin puree you guys have 2 options:
Option 1: buy the canned stuff at your grocery shop
Option 2: make your own…which is what I’ve done.
Making pumpkin puree’ is really easy! Clean and cut half of a small pumpkin into cubes
place it on a baking tray
and bake at 180 C (375 F) for about 30 min, or until soft
Place the cooked pumpkin into a blender or food processor and add 1 tsp nutmeg, 1 tbsp cinnamon, 1/4 tsp ginger powder
Blend all the ingredients together and set aside
Now using a milk froth heat up about 1 cup of milk
pour the milk into the blender with 2 tbsp of pumpkin puree’ (save some of the milk foam…we are going to use it in a bit)
Add the espresso, 1 tbsp of sugar and blend all the ingredients together! Pour the obtained pumpkin-latte drink into a coffee mug
Scoop out the milk foam
sprinkle some cinnamon sugar on top
and your wintry drink is READY!
