It has been a while since last time I posted a recipe for salty muffins…I actually only have one recipe for salty muffins on this blog that I posted back in 2010 when I first opened this blog, those where The Pizza Muffins…oh gosh…looking back at those pictures makes wanna hide myself underground…I hope one day I’ll get the time to re-post all my earliest recipes…it’s a dream I already know will hardly become true…
Anyways, back to the muffins, yesterday morning I felt like cooking, all I wanted to do was to put on my apron and try to be creative…unfortunately all I found left in my fridge was ham and a bag of frozen green peas…I made them be enough and came up with this simple muffin recipe.

Ingredients (makes 11 muffins):
- 3/4 cup flour
- 1/2 cup milk
- 2 small eggs
- 1/2 cup frozen green peas
- 4-5 leaves of fresh mint
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 4 tbsp butter
- 50 g ham
- 1/2 tsp black pepper
- 2 tsp salt
- 1 tbsp baking powder
In a pan heat up 2 tbsp of olive oil, throw in the frozen peas
add some fresh mint, about 2-3 tbsp of water, 1/2 tsp of salt, cover with a lid and let cook for about 15 min, or until peas are done
Meanwhile in a bowl sift flour and baking powder
In a separate bowl combine eggs and milk
pour in the melted butter
and with a whisk beat up all the ingredients together, then add salt and pepper
Stir well next add 1/2 cup of grated parmesan cheese
Pour the wet ingredients into the the flour
Next up, chop up some ham
and add the ham and the cooked and cooled down peas into the mixture
Stir well until all ingredients are well combined
then divide the misture into 11 muffin cups
Bake at 180 C (375 F) for about 30 min. Then Remove from the oven
and let them cool down
then serve!
