It’s HOLIDAY!
You know what that means: sleep in, fun nights out with my friends, lots of parties, some relaxing day at home reading a book and watching a movie and lots of cooking….FINALLY!
This is the first Chinese National holiday that I get to spend in China. For the past 4 years I’ve used any possible chance I had to leave the country, went to New Zealand, US, Spain, Japan, Philippines, Italy, Hong Kong…but this year I’ve decided to stay and enjoy the city! It’s working so far!
The recipe I’m going to share with you this morning is a very easy chicken dish! You guys know I love chicken, don’t you? Well, this recipe makes it a bit special as the chicken is flavoured with mustard, bacon and lots of spices…here is how you make it!
Ingredients (serves 4):
- 8 chicken drumstick
- 8 slices of bacon or pancetta
- 1/3 cup american mustard
- 2 cloves of garlic
- 1/2 cup of white wine
- 1/4 cup extra vergin olive oil
- 1 tsp sage
- 1 tsp rosemary
- salt and ground black pepper
Note: pictures don’t show the above listed quantities as, well…I’m a single person now so I just cook for myself most of the time.
Grab the chicken, rinse it
then remove its skin
and with a sharp knif make four 1 inch cuts
Coat each drumstick into mustard, letting the mustard inside each cut
Next up, grab some bacon or pancetta and wrap one slice around each chicken drumstick. Place the chicken into a well baking tray that you have previously coated with a couple of tbsp of extra virgin olive oil
Grab garlic, sage, black pepper and salt
and sprinkle’ em onto the kitchen. Drizzle with the remaining olive oil
Pour in the 1/2 cup of white wine and bake for about 45-60 min at 180 C (375 F)
Serve the chiken warm with whatever side that makes your skirt fly up! I had some broccoli in the fridge so just sautee’ them with some salt and garlic and my dinner was ready!
