Pasta con i Broccoli

After 3 sweet recipes in a row, it’s now time to make some pasta! Don’t you all agree with me?



I’m actually writing you from home today with a very bad cold. Temperature here in Shanghai suddenly dropped of 8 C and my southern Italian body couldn’t handle it the proper way!
When I still had a significant one living with me, I used to lay in bed all day and have him make me chicken soup! It felt good and helped recovering.
This time tho I had to make it myself, so this morning I woke up feeling like my head was about to explode, put some cloth on, head to the wet market, bought some chicken and fresh ginger then got back home and cooked the soup. It was not fun! But sipping this warm ginger-chicken soup is helping.

The recipe I’m going to share with you today tho is not the chicken soup, but this simple pasta with broccoli I made myself last weekend for lunch. I found it to be so delicious and so increadibly easy that I believe you will love it as well.


Ingredients (serve 4):

  • 300 g short cut pasta
  • 1 large broccoli bunch
  • 2 slices of pancetta (or bacon)
  • 1/2 cup scallion sliced
  • 7 tbsp extra virgin olive oil
  • 1/2 cup grated parmesan cheese
  • 2 tbsp salt
  • ground black pepper

Remove florets from broccoli. Cut or break florets into 1-inch pieces. Wash in cold water, drain and set aside.

Bring 6 quarters of water to a boil with 1 tbsp salt. Add florets and ook for about 3-5 minutes. Using a slotted spoon, transfer broccoli to a colander, rinse under cold water and set aside to drain.

Save the water as we’ll use it soon to cook the pasta

In a large saute pan, heat 6 tbsp olive oil over medium heat.

Chop up some pancetta and slice up the scallion

Add the pancetta or Bacon

and cook, stirring constantly, until slightly crispy, for about 2 minutes.

Add the scallions and continue cooking, stirring constantly, until barely tender, for about 1 minute.

Add the broccoli, turn heat to low and cook for about 2 minutes. Season with salt and pepper and remove from heat.

Grab some short cut pasta

Put the water, in which the broccoli was cooked, to boil.
Add pasta and cook until ‘al dente’

Before draining pasta, remove about ½ cup of pasta water and set aside.
Drain pasta in a colander, transfer to a bowl containing 1 tbsp olive oil and toss quickly.

Add half of the vegetable mixture and Parmesan cheese and toss well.

Add about 6 tbsp of pasta water and toss quickly to loosen.

Spoon the remaining vegetable mixture on top sprinkle Parmesan and serve

I just loved this pasta dish!
