I’m back! I’m sorry I’ve been away from you for all these days but trust me when I say I’ve been insanely busy! Work, friends, pole, parties…I barely had time to sleep.
But the other day I got myself into and kitchen and made a delicious cheesecake!
There is something between cheesecakes and me that I cannot explain, some kind of deep attraction that makes for me impossible to live without them.
Last time I made cheesecake was for Valentine, the Valentine’s Oreo Cheesecake
Before that I made the blueberry cheesecake,
and the pumpkin cheesecake,
and the Nutella cheesecake
and the New York style cheesecake
I loved them all the same way…I don’t do any favoritism with my kids…
Last week I decided to make dulce de leche cheesecake! I had a few friends over and decided to make a dessert to offer’ em. They appreciated it a lot and loved it even more…
This is how you make dulce de leche cheesecake…
Ingredients:
for the crust
- 400 g digestive cookies or graham crackers
- 1/2 cup butter
for the filling
- 400 g cream cheese
- 2 big egg
- 1 tsp vanilla extract
- 1/3 cup heavy cream
- 2 tbsp flour
- 3/4 cup sugar
- 1/2 cup Dulce de leche
For the crust, put the cookies or graham crackers into a zip lock bag
and with a roll pin crumble’ em
or if you have a food processor, well…go with it!
Next up, melt 1/2 cup of butter
and pour it on the cookies crumble.
With the back of a spoon or a measuring cup, press the crust into the bottom of a slightly butter 9-inch spring form pan. Press it evenly then refrigerate
Meanwhile prepare the filling
In the bowl of your electric mixer or hand mixer cream sugar, cream cheese and flour
then add eggs, one at a time, beating well after each addition
Next add heavy cream and vanilla extract. Beat until smooth.
Measure 1/2 cup of the cheesecake batter and pour into a small bowl. Add 1/2 cup of Dulce de Leche sauce
stir until well combined
Remove crust from the fridge and pour plain batter over crust. Top with Dulce de leche batter by placing rounded spoonfuls over the cheesecake batter
Then with the bac of a spoon gently mix the 2 batters together
Bake at 150 C for about 45-50 min, or until butter is set
Let cool then refrigerate!
You can serve it with more dulce de leche, or just eat it like this. Either way is going to be delicious!
