One of my new resolution for the coming months is to learn how to make proper pizza. I love pizza! It’s one of those food I can never get tired of! However I’ve never been a great pizza maker, despite my several attempts everytime there was something that needed to be improved.
This pizza has been the best one I’ve made in a long, long time. Might have been the fresh yeast I’ve used, the proper oven I’ve baked it in, or just the fresh air but the result was excellent!
Here is how I made it and how you should make it, if you feel like…
Ingredients:
- 2 cups flour
- 2/3 warm water
- 12 g fresh yeast
- 1 tsp sugar
- 1 tsp salt
- 1 tbsp extra virgin olive oil + 4 tbsp
- 1 grilled eggplant
- 2- 3 small grilled zucchini
- 1 big tomato
- 200 g mozzarella cheese (fior di latte)
- 4-5 leaves of fresh basil
- 4-5 Greek Olive
Start by making the dough, as usual combine flour and 1 tsp salt. Pour in about 1 tbsp of extra virgin olive oil
Dissolve 1 tsp of sugar and the fresh yeast in about 2/3 cup of lukewarm water
Pour the water onto the flour and kneat the dough with your hands or an electric mixer
Kneat until you get a smooth and soft dough. Cover with plastic wrap, place in a dry and warm place and let it rest for about 2-3 hours.
Meanwhile slice up very thin a big ripe tomato
grilled zucchini
grilled eggplant
slice very thin 200 g of mozzarella
basil
and black Greek olives. We will chop this up very soon
Grease a baking tray and roll out the dough very thin, as thin as you can
Distribute all the prepared vegetables on top of the dough, sprinkle some salt
and drizzle about 2 tbsp of extra virgin olive oil
Bake at 250 C for about 15 min
Remove from oven and let it rest for a few minute the serve!
