Back back back in the past, the area where I live in Italy was a Greek colony. There is still a little town where people still speak Greek.
Greek food and my city/area food have lots of similarities: lots of fresh vetegebles, cheese, garlic.
Today for dinner I made Greek salad, the way I like it! With lots of greek olives, feta cheese and local cucumbers.
Give this a try in this hot, hot, hot Summer!
Ingredients (serves 6):
- 150 g of mix garden salad
- 3 tomatoes
- 1 small purple onion
- 10-12 Greek olives
- 200 g feta cheese
- 1 big cucumber
- 1/4 cup extra virgin olive oil
- 1/2 tsp salt
- 1 tsp oregano
- 2 tbsp red wine vinegar
Put the salad in a big bowl
Grab the tomatoes and chop them into cubes
add’ em to the bowl with the salad
Slice up the cucumber very thin
Add them to the salad and give it a stir
Take your greek olives
grab about 10-12 and cut them up
Add them to the salad too
Next up, take the feta cheese…this one is made from a Greek woman that lives close to my house and produces cheese in a little farm. I love all her products!
Cut the feta into very small pieces
Slice up the purple onion, very thin
Add onion and feta to the bowl. In a separate bowl combine olive oil, vingar, salt and oregano. Give it a stir
then pour it onto the salad. Stir to coat all the ingredients with the dressing
