Being home is great! People were right, being here with the people I love and that love me is helping me healing. Getting over a break up is hard but home is definitely the place to be in a moment like this!
I’ve been cooking a lot since I got here, sometimes on my own, sometimes with my mom or dad and it feels good! It’s nice to have again someone to cook for!
So get ready cause I’ll be posting A LOT of recipes in the coming weeks!
Today Im going to share with you a dish called taieddhra. It is a casserole dish typical from my little town, that I have learned from my grandmother when I was still in high school. There are 2 versions of this dish: a simplified one, and a traditional one.
This is the simplified version but I’ll share with you the traditional one in the coming days.
Let’s get started!
Ingredients (serves 6):
- 2 big squash
- 4 big potatoes
- 3 onions
- 1/4 cup extra vergine olive oil
- 1/2 cup grated parmesan cheese (or more)
- 3 tbsp breadcrumb
- 5-6 ripe grape tomatoes
- lots of basil
- salt
So this is what we need! This kind of a belive it’s called squash in English
washed and pealed potatoes

grated parmesan cheese
onions
Start by pouring some olive oil in a casserole pan
Slice up the onion (as thin as you can…….Im clearly not good at this…)
and lay them on the bottom of the casserole pan
next up, slice up the squash
and place it on top of the onion so to cover it up completely
sprinkle some salt
put a few pieces of tomatoes
chopped basil
parmesan cheese
then slice up the potatoes and place them on top
again, cover the potatoes with more sliced onion, chopped tomatoes and basil, parmesan cheese and salt
To finish, cover all with more sliced squash, more grated parmesan cheese and chopped basil
and last drizzle more olive oil
Put it on the stove at medium heat, cook for a few minutes so that the onion at the bottom can get some flavor, then pour in some water
about this much, reduce to low, cover with a lid and let cook for about 20-30 min or until all veggies are cooked
Remove from the stove, sprinkle the top with more parmesan cheese
then breadcrumbs
and bake at 180 C for about 15-20 minutes or until the top has got a nice golden brown color
Let it sit for a couple of hours before serving!
