I’m home! and it feels amazing.
Weather here is soooo nice: sunny days, blue sky, fresh air. Sometimes after having spent too long in China you kinda forget how important weather is! Just only by waking up, open the window and looking at the sun shining outside put me in a good mood!
This swordfish dish is what my dad and I made the other day. It is a very simple and easy Mediterranean recipe which I LOVE!
I’ll be posting more fish-based dishes in the coming weeks as fish is what I’ll be eating the most here at home.
But now, let’s make this Mediterranean Swordfish!
Ingredients (serves 4):
- 500 g swordfish steak
- 2 tbsp extra virgin olive oil
- 250 g grape tomatoes
- 1 tsp salt
- 2 tsp capers
- 2 cloves of garlic
- 1/2 cup of white wine
- fresh parsley
- rosemary
Take your swordfish steak and rinse it with some fresh water, set aside
In a pan heat up oil and garlic
Grab some cherry tomatoes, wash’ em and cut them in half
Add them to the pan and cook on meadium-high
pour in half a glass of white wine
keep cooking on high until wine is evaporated and tomatoes are soft
Add the swordfish, salt and cook it for a few minutes on both sides
Next up, add the herbs
Capers and cook for a few more minutes, just give the ingredients the time to fall in love with eachother
When ready
divide into portions
and serve!
