Chicken Burgers!

In Italy in 3 sleeps! Can’t wait!

Since I promised I would have posted some recipes soon, and since I’ve already made you wait for quite some time now, I’m here today to share with you this easy meal idea!

I made this on Thursday. It was our light dinner before heading to ladies night at Zeal.
I loved it because:

1. It’s light

2. It’s tasty

3. It’s made with chicken

4. It’s not fried (but could be)

5. It’s Summer

Btw, lots of people have emailed me recently and a lot of them have encouraged me to JUST MOVE ON without expecting anything. Some people have said that if my ex has left me like that, it means he had some other reasons besides his job. Now I want to thank all these people for having shown me their support, but I also want to tell them that unfortunately life is not that easy. If there is something I’ve learned from my ex is that life is not square or round, it’s not black or white and there are a million reasons why my bf decided to move to India and take a break, as well as there are a million reasons why one day we might, as might not, get back together. So yeah, I’m moving on with my life but this doesn’t mean that I am totally giving up on the person I love.

I am leaving myself open to any possibility! I might meet someone tomorrow and deeply fall in love again, or it might also be that no matter who I’ll meet in the coming months I’ll still feel attached to my ex and that would defenetely tell me what is that I have to do!
What I know for sure is that either we’ll get back together or no I’ll find my way for being happy!

Now said that, let’s move on to food! Let’s make this chicken burgers, shall we?

Ingredients (serves 4):

  • 1 whole egg
  • 1 tsp salt
  • 300 g ground lean chicken
  • 1/4 cup grated parmesan
  • 1 cup of green peas
  • 3-4 tbsp breadcrumb (for the mixture)
  • 1/4 cup breadcrumbs
  • 1/2 tsp black pepper
  • minced parsley
  • fresh salad
  • 2 tbsp olive oil
  • 2 tbsp chopped onion
  • 3-4 leaves of mint

Cook the green peas in a skillet with 1 tbsp olive oil, chopped onion and mint. Add some water and cook for about 20 min

In a bowl combine chicken

crack in one egg

add salt and pepper

and 1/4 cup grated parmesan, chopped parsely

Add in the green peas and 3 tbsp breadcrumbs (or more if the mixture is too soft). Using a spoon mix all the ingredients together until well combined

Divide the mixture into 4 pieces. Shape each like a burger pressing it down more in the center, then coat each burger into bread crumbs

Sprinkle each chicken burger with a little bit of olive oil and back at 180 C for about 35-40 min.

When your burgers are ready, remove them from the oven and serve’ em with some fresh salad.
