Happy Fourth of July America!
Ingredients (makes 8 muffins):
- 1/2 cup sugar (100 g)
- 1/3 cup + 1 tbsp butter (100 g)
- 2 eggs
- 1 cup + 2 tbsp all purpose flour ( 140 g)
- 30 ml whole fat milk
- 1 tbsp baking powder
- 1 tsp vanilla extract
- red and blue food color
Crack 2 eggs in a measuring cup
melt the butter and let it cool down
Add 1 tsp vanilla extract to the eggs, beat them up a bit
then slowly pour in the melted and cooled down butter
In a bowl of your electric mixer combine flour and sugar
and baking powder
with your mixer at low give it a light stir
with your mixer on slowly pour in the egg/butter mixture
and 30 ml of milk
mix on medium for a few minutes scraping down sides of the bowl from time to time
Divide the batter into 3 bowls
grab some food coloring, I bought this set on taobao!
Open the red and the blue
and pour a few drops of the red color in one of the bowl
then stir around to combine
Next pour a few drops of the blue one in another bowl
stir around to combine
Fill up each muffin cup with less then 1 tbsp of the blue batter
then the white
spread the batter using a toothpick
and the red one!
There you go
Bake at 180 C for about 15 min
Take them out of the oven, let your Fourth of July muffins cool down then serve!
