This is by all mean, my most loved snack to bring to the beach in the summer!…..can you even say “most loved” in English?……mmm,
It’s focaccia with grape tomatoes and oregano! The simplest thing on earth but still one of the most tasty one.
Enjoy this recipe on this finally sunny Monday…
Ingredients:
- 2 cups all purpose flour
- 2/3 cup warm water (more if needed)
- 15 grape tomatoes
- 2 tbsp + 2 tbsp olive oil
- 2 tsp salt
- 1 tsp sugar
- 2 tsp instant yeast
- 1 tsp dry oregano
In a bowl combine sugar and yeast
pour in about 1/3 cup of warm water, stir around and wait until it gets all freaky bubbling…that means it’s ready to be used!
In a bowl of your electric mixer combine flour and salt
pour in the yeast/water mixture
and with you mixer at low start stirring the ingredients
Drizzle in 2 tbsp of olive oil, and the remaininig water, or more if needed. You want to get a very, very soft abd smooth dough so keep adding water and mixing until you get it
Transfer dough into a lightly greased bowl, cover with plastic wrap and let raise for about 2 hours or until doubled in size
Pour about 1 tbsp of olive oil on a baking tray
defleat dough and spread it onto the tray creating small hole with your fingers
Nice manicure, uh? I’ve found this little place close to my house where I can get my nails done with OPI polish for only 35 rmb (5 $)…I love it!
Back to the focaccia, cover the dough with plastic wrap and let rest about 30 min
Now, wash the grape tomatoes
cut them in half and squeeze out the seeds
Place each half onto the dough pressing gently down
Sprinkle some salt
and dry oregano
then drizzle with more olive oil. Let it rest for 30 more minutes
then bake at 190 C for about 30-40 minutes. Remove from the oven and let it cool down
When ready to eat, cut into squares
and serve!
