Italian Style Breakfast burrito!

Ok, ok, calling this a burrito might sound a little bit too much…but I used tortillas and I wrap them up like a burrito…

No matter how you wanna call it, this is what I whipped up for breakfast last Sunday for my bf. He loved it!

Here is what I did!

Ingredients (makes 2 small burritos):

  • 2 eggs
  • 2 medium size tortillas
  • 4 slices of Italian prosciutto
  • 50 g of shredded mozzarella cheese
  • 1 tbsp olive oil
  • a pinch of salt
  • 1/2 tbsp butter
  • Arugula

In a skillet pour about 1 tbsp of olive oil (I used the extra virgin stuff)

heat it up, then crack in 2 eggs, a pinch of salt and as soon as they start cooking stir them around. You have just made scramble eggs. Congrats!

Grab the tortillas and on top of each one lay 2 slices of Italian prosciutto. I love prosciutto!

Add the scrambled eggs

and the shredded mozzarella cheese

Now wrap up each tortillas like a burrito

folding in the edges

Heat up a skillet with some butter and grill the burritos on both sides until they get a nice golden brown color

Now grab some fresh arugula. We grow this on our balcony!
