Before knowing my boyfriend I didn’t like eating marshmallows, in fact I rarely bought them or use’ em in my recipes. Then about 4 years ago my American boy introduced me to the wonderful world of bbq marshmallows, marshmallow cupcakes, Rocky Road Ice cream and ever since I’ve been a huge fan of marshmallows in any form or shape.
The only reason why I didn’t used to like marshmallows was because I didn’t really know what to do with them, but now I know and this last recipe is definitely my favorite one! A chocolate brownie with a layer of graham crackers covered with chocolate and marshmallows and shaped like a cake!
Here is how I made it!
Ingredients (makes 2 cakes, serves 4):
for the crust
- 3 tbsp unsalted butter
- 2/3 cup graham cracker crumbs
- 1 tbsp sugar
for the brownie
- 1/2 stick of unsalted butter
- 1/4 unsweetened chocolate, chopped
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup all-purpose flour
topping
- 1/2 cup semi-sweet chocolate chunks or chips
- 2 cups marshmallow miniature
- about 2 tbsp graham cracker crumbs
First thing to do is grabbing some graham crackers (or digestive cookies, as I can’t find the graham stuff here in China) and put them in a zip lock back
then with a roller pin crumble’ em – or if you are the lucky gal with a food processor, just use that…but then we’ll never be friends again…
In a bowl place the cookie crumbs
but save about 2 tbsp! We’ll use that for the topping
now add about 1 tbsp of sugar
then pour in 3 tbsp of melted unsalted butter
Stir together to combine
Next press crumb mixture into two 10 cm cake pans which you will previously have lined with foil
Bake about 15 minute at 180 C, then remove from oven and set aside
While the crust is baking, go ahead and start making the brownie batter…Love this part!
Place butter and chocolate in a microwavable bowl and microwave until both ingredients are melted. Stir’ em together
In a bowl of your electric mixer place the brown and white sugar
then pour in the melted chocolate/butter mixture and the vanilla extract, then mix all together
Add eggs and mix on high speed for about 2-3 minutes. I added my eggs one at a time
Last add in flour and mix just until incorporated
Pour batter onto the 2 crusts and bake at 180 C for about 35 min. Pls do not over-bake the brownie, a little bit soft in the center is goooooddd
Let the brownie cool down a bit, then add the chocolate chips
and the marshmallow miniature
Sprinkle the top with the cookie crumbs
beautiful!
and bake at 240 C for a few minutes, just until golden…I left mine a 30 sec more than needed……..
Remove from oven and let cool down for about 10-15 min
Then using the foil remove the cakes and place’ em on a plate
SERVE!
This is great either warm or cold
