When the heat kicks in like it did here in Shanghai over the last few days, the only thing I can think of eating is salad: pasta salad, bean salad, meat salad. Any kind is good for me as long as I don’t have to inject anything over 20 degree Celsius.
Yesterday I this chicken strip salad for lunch. It turned out as a great idea in this hot weather!
This is how I made it!
Ingredients (2 servings):
- 1 whole chicken breast
- 1/2 cup flour
- 1/2 cup + 2 tbsp buttermilk
- 1 tsp seasoned salt
- salad mix
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 2 tbsp sour cream
- 1 tsp salt
- 5-6 cherry tomatoes
- canola oil to fry
Grab your skinless, boneless chicken breast
and cut it into strips
then soak the chicken strips in about half cup of buttermilk
in an other plate place flour with seasoned salt
then drizzle in about 2 tbsp of buttermilk
Remove the chicken strip from the buttermilk and place them into the flour mixture, coating them throughly
Heat up some canola oil and fry your chicken strip a few at a time
on both sides, of course。。。。
Then remove from frying pan and place them on kitchen paper
In a big salad bowl combine olive oil, vinegard and salt
then add a coupld of tbsp of sour cream and stir to combine
Add salad mix to the bowl
a few cherry tomatoes
and stir around to dress our salad
Now just place on top of the well-dressed salad the chicken strips
And serve!
