I cooked with my mom again!
We made stuffed artichokes. There are gillions of recipes on how to make stuffed artichokes, this is my mom’s family one: easy and tasty…as always.
As most of the Southern Italian recipes, this is made of very simple ingredients and very economic, all you need is artichokes, bread, eggs and Parmesan cheese.
Here is how you make it:
Ingredients (serves 4):
- 8 big artichokes
- 300 g white bread
- 2 eggs
- 1/2 cup grated Parmesan cheese
- 2 cups vegetable broth
- 1 tsp salt
- 2 tbsp minced parsley
- 3 tbsp extra virgin olive oil
- 1 tbsp capers
- 1/2 chopped onion
Grab the artichokes
Remove the stalks and the external leaves
Cut off the tips
just like this
clean off a bit the remaining stalk
and place the artichokes in a bowl filled with water and lemon
Soak in water the bread until soft
then squeeze out the water and place it in a bowl
Grab some fresh eggs
and crack in 2
add 1/2 cup Parmesan cheese
salt and minced parsley, stir around
then add the capers and stir to combine
In a pan pour about 3 tbsp of olive oil
Add in the chopped onion
Using your hands spread open the leaves
then stuff in between each leave with the bread mixture
Repeat with all the other artichokes then place them inside the pan
Pour in the broth and cook on low heat for about 20-30 min covered with a lid
Bake at 220 C until they get a nice golden-brown color on top
Let them cool down then serve!
