because it’s Saturday and it’s the best day of the week
because I’m in Italy
because my mom’s surgery went great and she is healthy and fine
and because I’m happy,
I have decided to share with you this creamy, sweet, pie recipe I made a few weeks ago before leaving China for a dinner with friends.
This pie needs no baking, so perfect for us fellow expats who happen to live in an apartment with no oven. All you need is a list of simple ingredients and a fridge.
Ingredients (serves 8):
- 20 whole oreo cookies
- 1/4 cup butter
- 1 cup strawberry
- 3 tbsp sugar
- 170 ml strawberry yogurt
- 1 package of instant vanilla custard
- 1 cup heavy cream
- 2 tbsp of jell-o gelatin, strawberry flavor
- extra strawberries to garnish
Grab about 20 whole oreo cookies,
place them in a zip lock bag and with a rolling pin crust them
If you own a food processor go ahead and use it!…I’m not that lucky…
Melt about 1/4 cup butter, stir it in until well combined
Pour into a standard pie pan and press evenly
save a couple of tbsp of the crust to decorate the top of the pie
Bake for about 5 min at 180 C. Note: you don’t want to cook the crust, just enough to set it.
Now go ahead and make the filling.
Wash strawberries, then cut’em into very small pieces
Add sugar, stir and place in a strainer so they can release all water
Meanwhile in a bowl of your electric mixer place yogurt
grab one package of instant vanilla custard (you can find it for about 20 rmb at Cityshop)
and pour it in the bowl. Beat at medium speed for a couple of minutes
Pour in heavy cream and beat until whipped
now, here comes the kick. Grab some Jello-o gelatine
keep mixing, add a couple of tbsp of o’jello and mix until well combined and whipped
Turn off the mixer and fold in strained strawberries until just combined
Pour filling on top of the crust
and spread evenly
Grab some of the leftover crumb and sprinkle on top
garnish with more chopped strawberries
and refrigerate for at least 2 hours for a more creamy pie
If you want a more settled pie, put it in the freezer and remove only 15-20 min before serving
