Chicken Pot Pie

When I told my bf that for dinner I made Chicken Pot Pie he looked at me with an inquisitory look and asked why on earth and Italian that cooks delicious Italian food would have ever thought of making a British dish.

Then when he sat down at the dinner table and tried my Chicken pot pie, he immediately changed his attitude and said: “always keep experimenting in the kitchen Dani :)!”

He loved it! So did I and I am sure so will most of you!

Give this pie a shot anytime soon: it’s easy, it’s quick and it’s tasty!

Ingredients (for 2 servings):

  • 1/2 chicken breast
  • 1/2 carrot, diced
  • 1/2 potato, diced
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1 cup sliced mushrooms
  • 1-1/2 tbsp butter
  • 1/2 cup chicken broth
  • 1 tbsp flour
  • 1/4 cup milk
  • 1 tsp salt
  • 1 tsp seasoned salt
  • 1/2 cup frozen peas
  • 1/4 cup white wine
  • 1/4 cup red wine
  • 2 tbsp parsley chopped
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 small discs of pie crust

Grab chicken breast

and chop it up into bite-size cubes

In a skillet heat up 1 tbsp of olive oil add the chicken, season with salt and pepper and stir for a couple of minute

Pour in 1/4 cup of dry white wine

turn on the heat and keep cooking until all liquid is evaporated

Remove from heat and set aside.

Chop and dice all the vegetables (onion, carrot, potato, celery and mushroom)

In a pot heat up about 1-1/2 tbsp of butter

Add veggies and cook at low heat for about 5-10 min

Add 1 tsp of seasoned salt

Pour in 1/4 cup of red wine, turn the heat to medium-high and cook until liquid is evaporated

Low heat and add 1 tbsp of flour, stir well

Pour in chicken broth

and milk

adjust with salt and pepper and cook until mixture thickens

add in 1/2 cup of frozen peas

and the chicken

Let simmer for a few more minutes. Turn off the heat and add chopped parsley

Divide the ingredients into 2 small aluminum or ceramic containers

next grab the pie crust

and place one disc on top of each serving. Seal well edges.

Do 3 small cuts

and bake at 200 for about 15 min, then cover with aluminum foil and keep baking for other 25 min.

Remove from oven, let the pie sit for a few minute

Serve warm!
