Quesadillas are very similar to the Italian Piadina, it’s basically the same kind of tortilla filled with different ingredients.
As you know I like Mexican food on a very restricted base. I like their nachos, guacamole, pico de gallio, and chicken quesadillas.
The other day I had some friends over for dinner and I was searching for some starters so I thought about making quesadillas, but why would an Italian invite their American friends and feed them Mexican food…that didn’t make much sense to me. So I decided to space things up a bit and make what I’ve called an “Italian Style Quesadillas”.
They loved it! I loved it! I hope you’ll love it too
Ingredients (8 servings):
- 2 tortillas (or piadina)
- 300 g mushrooms
- 100 g prosciutto
- 1 bag spinach
- 2 tbsp olive oil
- 1 tbsp butter
- 1/2 cup white wine
- 2 tsp salt
- 100 g mozzarella cheese
- extra butter for tortillas
Start by washing and slicing up the mushrooms
then throw them in a skillet with 2 tbsp of olive oil, saute’
pour in 1/2 cup of white wine, add salt and continue cooking until liquid is evaporated
Remove from heat and set aside
In the same skillet, add 1 tbsp of butter
and throw in the already washed and dry spinach
Sprinkle 1 tsp of salt and cook for about 5-8 minutes. Remove from skillet and set aside
Grate up some mozzarella cheese
Now we are ready to assemble the quesadilla. Start with a layer of mushrooms
then spinach
then prosciutto
and finish with shredded mozzarella
Cover with an other tortilla
Heat a grill pan and melt some butter
Place the tortillas in the pan and cook at medium heat for about 2-3 min. Smear the top of the tortillas with butten
then flip i over and cook for 3 more minute or until golden brown and cheese is melted
Remove from pan and slice it up
Serve warm with sour cream!
