There is not much to say about these muffins, they are just AMAZING: moisture, sweet and a bit crunchy. That’s all I look for in a muffin!
I guess most of you know what Dulce de leche is. Well, for those who don’t, I’ll explain briefly:
it is a thick, caramel-like milk base Latin-America sauce. Its name literally means “sweets made of milk” as it is made my heating sweeten milk.
Most expats now I’m sure are wondering where to get dulce de leche in Shanghai (or China), well you guys have 2 options:
a) Make your own by buying a can of condensed milk and heating it up at low heat for about 3 hours.
b) Buy it on taobao. This is the link from the guy I ordered mine. As always, if you need help with that you can contact me 🙂
But now, let’s make muffins!
Ingredients (for 6 muffins):
- 1/2 cup flour (heaping) (70 g)
- 1/4 cup butter (50 g)
- 1 egg
- 5 tbsp dulce de leche (for the batter)
- 6 tsp dulce de leche (for the filling)
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 2 tbsp canola oil
- 3 tbsp milk
- caramelized pecans and coconut flaks to garnish
In a bowl place flour
and baking powder
In an other bowl melt 1/4 cup of unsalted butter
crack in one egg
and beat it slightly
add the vanilla extract
next add about 5 tbsp of Dulce de Leche sauce. Stir well until you get a nice and smooth cream
Now pour the wet ingredients into the dry one
until the last drop
and stir well
Next up, add 2 tbsp of canola oil and 3 tbsp of milk (more if necessary). The oil and the milk are the secret for getting really moisture muffins!
Now place paper liners into 6 muffin cups and pour in each about 1 tbsp of butter
then add about 1 tsp of dulce de leche sauce right in the center
and cover with an other tbsp of butter
Now sprinkle the top of each muffin with coconut flakes
and decorate with half a caramelized pecan
Bake at 180 C for about 20 min
Let it cool down
Enjoy these muffins for breakfast
