I’m a chowder freak!
I love chowders
and now salmon chowder!..why not?
Ingredients (for 6 servings):
- 300 g fresh salmon
- 1 tsp theme
- 3 cups fish broth
- 1 onion
- 1 carrot
- 1/4 stalk celery
- 2 medium potatoes
- 3/4 cup heavy cream
- 1 tsp salt
- 1/2 tsp ground pepper
- 1 tbsp lemon juice
- 2 slices bacon
- 1 tbsp flour
- 1 tbsp butter
Start by making the fish broth! I used these fish cubes I brought from Italy but you can make broth from real fish or just buy the ready stuff at any grocery store
Then prepare the veggies
Grab some fresh celery and chop it up
a carrot
and 2 potatoes
put the veggies aside
chop up a small onion
and 2 slices of bacon
Heat up one tbsp of butter and saute’ the bacon
add in the onion and let it sweat
Next up add celery, carrot and potatoes. Stir around
Add one tbsp of flour
1 tsp of theme
Stir around then pour in 3 cups of fish broth. Cover with a lid and let simmer for about 15 min
Then pour in about 3/4 cup of heavy cream. No milk, no half and half but heavy cream!
Next grab a nice, fresh piece of salmon
and chop it up into cubes
then add it to the soup
Squeeze in the juice of half a lemon
Adjust with salt and pepper and let simmer for 10-25 minutes
Your Salmon Chowder is ready!
Ladle soup into serving bowls
and enjoy warm
